Why a page on flatware? It's one place to shed off a few grams, is fun and gives me a place to store links for future use. Plus, flatware isn't just flatware. It can be a very personal item and having the right one/set in your pocket can be a really big deal - even if you never share this little secret with anyone.
The following is broken down into flatware made of titanium, stainless and lexan.
Titanium flatware is lighter than plastic and as durable (or more so) than steel. It's only disadvantages are the steep prices and lack of availability is some places.

The Titanium Art + Titanium Factory has a nice and complete line of titanium flatware with lots of options.
DIYers can easily modify a set of titanium tent pegs/nails (such as the Vargo Ti Nails shown above) into a pair of titanium chopsticks and with a bit of effort can form a spoon, fork or other flatware out of a small sheet of titanium.
Stainless isn't as light as titanium, but is very durable and a heck of a lot cheaper.

Lexan and other polycarbonate flatware and similar in weight to titanium and much much cheaper. They are pretty durable, but certainly not un breakable.
